On Saturday, after a full day of outlet shopping up at Woodbury Commons in sub-freezing weather, K. and I decided to hunker down at home with some comfort food. It was a perfect evening for one of our favorites, a little recipe I discovered while watching an Oprah rerun during my old unemployed actor days: Patti LaBelle's Over The Rainbow Macaroni and Cheese.
It's. So. Good.
I had my choir concert on Sunday, another absolutely frigid day (the air, not the music - the concert was absolutely lovely) and by the time we got home we didn't feel like cooking. So we decided it was time to break in the deep fryer that we got for Christmas. Can you see where this is going? That's right. We made Deep Fried Mac & Cheese. We dug out our fire extinguisher and aloe vera gel - you know, just in case - and got to it.
The deep fryer...totally orgasmic, just on its own.
After cutting the leftover casserole into squares, we dredged them in flour, brushed them in an egg wash and rolled them in breadcrumbs.
Golden brown nuggets of deep fried goodness.
Molten mac and cheese.
I wanted to share this with you sooner, but it took this long for my arteries to reopen enough for blood flow to reach my fingers and allow me to type this much.
Oh. My. Zod.
My heart just stopped looking at the photos. I want it SO BADLY.
As arteries are heard slamming shut around CyberSpace.....
